Scissortail Bakery & Kitchen in Manitowoc, Wisconsin is a wholesale, healthy food processor. We specialize in producing bone broths and stocks from animals that were only fed with grass and raised in the pasture. Most of our customers are foodies and people who are health conscious.

What sets our company apart from others is that we are a small farm cooperative that produces great results. We are creating a more sustainable food system while providing our community with rich, nutrient-dense products.

At Scissortail Bakery & Kitchen, we dedicate ourselves to providing clean and nutritious products to the community. To source our ingredients, we work closely with small farmers. We also make it our goal to care for the environment.

Meet Our Owner

Helena Stallings was born and raised in Oklahoma, where she fell in love with the state bird, the scissor-tailed flycatcher. She attended Columbia College Chicago for her undergrad. Then she moved to Los Angeles where she worked in film, television, and music industry. 

Helena sold all of her things on a whim and traveled around Europe and the USA for a few years. Eventually, she ended up in Colorado to enter culinary school. After graduating, she moved to New York City to work for the Food Network as a food stylist. She has more than five years of experience in the industry.

In 2015, Helena and her soon-to-be husband decided to leave the city and move back to his hometown, Manitowoc, and the rest is history.

Why Bone Broth? 

Over the last couple of months, I have had the opportunity to demo my products in health food stores around Wisconsin and speak directly with the people that Scissortail is trying to reach. I have heard every story of people suffering from chronic illnesses, people who are struggling with someone in their family with a chronic disease or mental illness. 

It breaks my heart when I hear the stories my customers tell me, but I use it to strengthen my passion for providing my community with a healthy product. The reason I began developing my grass-fed bone broth was in honor and memory of my father who passed away in 2004 from melanoma. It was a very fast experience, but I saw firsthand what it is like to see someone you love struggle through chemo and radiation. Their bodies need so many calories and nutrients to fight and heal, but due to the treatments, they often find themselves getting sick after they eat. 

Many people drink Ensure or Boost 'complete meal drinks,' but they are full of synthetic vitamins and minerals trying to replicate what nature already provides. My grass-fed bone broths are full of everything they need to not only ease their symptoms but allow their bodies to begin to heal. The same is true for anyone suffering from an auto-immune disorder such as IBS, Crohn's, Celiac, Leaky Gut, etc., or anyone suffering from skeletal or joint problems, arthritis, asthma, food allergies, food intolerances, high blood pressure, athletes, anyone struggling with ADD/ADHD, OCD, depression, fatigue, anxiety, PMS, the list goes on and on. 

My grass-fed bone broths will not be a cure for any illness or disease, however, when they are paired with a healthy diet, exercise, meditation, and love, I truly believe our food will become our healthcare again.
